
Chromologics raises €7 million to bring its natural colour ingredients closer to market

Investors reaffirm their commitment
Copenhagen, Denmark. November 18th , 2025, – Chromologics, a Danish biotech company developing fermentation-based natural colours, has raised €7 million from Novo Holdings, EIFO (the Export and Investment Fund of Denmark), Döhler Ventures, Collateral Good Ventures and Synergetic. This takes the company’s total capital raised to almost €20 million.

The funding will enable Chromologics to complete regulatory submissions for its natural food colour, Natu.Red®, with the European Food Safety Authority (EFSA) and the US Food and Drug Administration (FDA). It will also support the subsequent product launch and the scale-up of production in collaboration with its large-scale CMO partner providing access to high-capacity fermentation facilities.
Chromologics is a spin-out from the Technical University of Denmark (DTU), and Novo Holdings and EIFO have backed the company since 2020 with a shared conviction of the market potential for fermentation-derived natural colors.

Advancing regulatory milestones and market readiness
​The latest funding comes at a pivotal moment for the food colouring industry. As a result of the recent scrutiny of synthetic colourants, which has led to the ban of synthetic Red 3 in the United States, the demand for natural, heat- and pH-stable alternatives is now increasing further among food and beverage producers.

Chromologics’ Natu.Red® offers a high-performing, heat- and pH-stable solution that is suitable for vegan diets and based on a stable supply chain, operating independently of traditional seasonal production cycles and geographic constraints. The development of fermentation-derived food ingredients is a key element in advancing the green transition. Fermented natural colours are more sustainable than natural colours extracted from fruits and vegetables as they require less land, water, and agricultural input while providing consistent quality independent of season or geographies.
Over the past four years, Chromologics has conducted trials with more than 90 food manufacturers across Europe and the United States, generating valuable insights into the performance and application potential of Natu.Red®.

Olon and Chromologics established this partnership to leverage Olon’s fermentation sites across Italy. Chromologics are going to revolutionize the natural food color market by selling a natural red color to enable food manufacturers in the US and EU to replace synthetic or unstable natural colors.

Chromologics, the Danish biotech company specializing in production of innovative natural food colors, today announced the successful closure of an extended seed round. The company raised an additional EUR 7.1 million in equity from its existing investors plus two new investors.
“We are thrilled to be able to accelerate our commercial development and welcome two new, strong investors, Doehler Ventures and Thia Ventures,” said Gerit Tolborg, CEO of Chromologics. “In particular, Doehler’s formal investment marks a new phase in our collaboration. Chromologics’ proprietary fermentation production method is environment-friendly, stable, and can ensure a cost competitive and sustainable supply to food and beverage manufacturers. Natu.Red®, the first product in the pipeline, is pH- and temperature stable, tasteless, water soluble, and vegan.
The co-founders, CEO Gerit Tolborg and CTO Anders Ødum, discovered this novel molecule and have over the last 5 years built Chromologics from a university spin-out to a company with own lab and pilot production facilities.

Chromologics’ has demonstrated scalability of their fermentation process to industrial scale, built a strong network of potential customers, and began their regulatory approval program. Early results indicate cost-effective production, excellent product performance, and safe use of Natu.Red® as a novel food additive.
During the coming funding period Chromologics will further advance regulatory approval, establish a commercial production line, expand the portfolio towards additional colors, and progress on commercial execution.
